🍽️ Crispy Gratin with Kale, Potatoes, and Ham

Ingredients
- 200 g fresh kale
- salt
- 400 g waxy potatoes
- 200 g cooked ham (in slices)
- 3 eggs
- 450 ml heavy cream (at least 30% fat content)
- 150 g crème fraîche
- 1 tsp medium-hot mustard
- 125 g freshly grated cheese (e.g. Gouda)
- pepper (from a grinder)
- nutmeg
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Remove the tough stems from the kale and wash the leaves thoroughly.
- 3. Bring a pot of water to a boil with salt.
- 4. Add the kale to the boiling water for 2 minutes (this is called blanching).
- 5. Remove the kale and immediately shock it with cold water to keep its color.
- 6. Drain the kale and cut the leaves into thin strips.
- 7. Peel the potatoes and wash them.
- 8. Slice the potatoes into very thin slices or use a mandoline.
- 9. Cut the ham into small cubes of about 1 centimeter in size.
- 10. Whisk the eggs in a bowl with the cream, crème fraîche, and mustard.
- 11. Add half of the cheese to the egg mixture and season everything with salt, pepper, and nutmeg.
- 12. Grease a baking dish well with butter.
- 13. Layer the potato slices and kale in a shingled pattern in the dish.
- 14. Distribute the ham cubes evenly over the layers.
- 15. Pour the egg cream sauce over everything.
- 16. Sprinkle the remaining cheese over the gratin.
- 17. Bake the dish in the preheated oven for 35 to 40 minutes until golden brown.
- 18. Remove the gratin from the oven and serve it immediately while hot.
