  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Remove the tough stems from the kale and wash the leaves thoroughly.
  3. 3. Bring a pot of water to a boil with salt.
  4. 4. Add the kale to the boiling water for 2 minutes (this is called blanching).
  5. 5. Remove the kale and immediately shock it with cold water to keep its color.
  6. 6. Drain the kale and cut the leaves into thin strips.
  7. 7. Peel the potatoes and wash them.
  8. 8. Slice the potatoes into very thin slices or use a mandoline.
  9. 9. Cut the ham into small cubes of about 1 centimeter in size.
  10. 10. Whisk the eggs in a bowl with the cream, crème fraîche, and mustard.
  11. 11. Add half of the cheese to the egg mixture and season everything with salt, pepper, and nutmeg.
  12. 12. Grease a baking dish well with butter.
  13. 13. Layer the potato slices and kale in a shingled pattern in the dish.
  14. 14. Distribute the ham cubes evenly over the layers.
  15. 15. Pour the egg cream sauce over everything.
  16. 16. Sprinkle the remaining cheese over the gratin.
  17. 17. Bake the dish in the preheated oven for 35 to 40 minutes until golden brown.
  18. 18. Remove the gratin from the oven and serve it immediately while hot.
