  1. 1. Preheat the oven to 200 degrees Celsius.
  2. 2. Peel the potatoes and slice them thinly.
  3. 3. Cook the potato slices in plenty of salted water for 10 minutes.
  4. 4. Drain the water and let the potatoes drain well.
  5. 5. Cut the tofu into small cubes.
  6. 6. Clean the spring onions and cut them diagonally into thin rings.
  7. 7. Peel the onions and dice them into small cubes.
  8. 8. Whisk the cream and eggs together in a bowl.
  9. 9. Season the cream and egg mixture with salt, pepper, and nutmeg.
  10. 10. Add the drained potatoes, tofu, onions, and spring onions to the cream mixture.
  11. 11. Mix all ingredients well so they are evenly coated.
  12. 12. Transfer the mixture into a buttered baking dish.
  13. 13. Bake the gratin in the oven for about 40 minutes.
  14. 14. Wash the corn salad and shake it dry.
  15. 15. Halve the washed and dried tomatoes.
  16. 16. Place the salad in a bowl.
  17. 17. Drizzle the salad with balsamic cream and oil.
