  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Cut the potatoes into very thin strips, thinner than french fries, or slice them thinly.
  3. 3. Peel the onions and dice them finely.
  4. 4. Heat butter in a pan and sauté the onions until they become translucent.
  5. 5. Remove the onions from the pan and set them aside.
  6. 6. Rinse the anchovy fillets thoroughly under running water.
  7. 7. Pat the anchovies dry with a kitchen towel.
  8. 8. Cut the anchovies into small pieces.
  9. 9. Grease a baking dish well with butter.
  10. 10. Place a layer of potato strips into the baking dish.
  11. 11. Spread a layer of the prepared onions on top.
  12. 12. Add a layer of the anchovy pieces.
  13. 13. Season this layer with a pinch of salt and plenty of black pepper.
  14. 14. Repeat the layers of potatoes, onions, and anchovies until all ingredients are used up.
  15. 15. Pour 200 grams of cream over the top layer.
  16. 16. Preheat the oven to 175 degrees Celsius fan-forced.
  17. 17. Place the baking dish in the preheated oven.
  18. 18. Bake the gratin for about 35 minutes.
  19. 19. Remove the baking dish from the oven briefly.
  20. 20. Pour the remaining cream over the gratin.
  21. 21. Sprinkle breadcrumbs evenly over the top.
  22. 22. Place the baking dish back into the oven.
  23. 23. Bake the gratin for another 15 minutes until the top is golden brown and crispy.
