🍽️ Crispy Potato Gratin with Anchovies

Ingredients
- 800 g sweet potatoes (waxy)
- 3 onions
- 2 tbsp butter
- 12 anchovy fillets (in salt)
- salt
- pepper (from the mill)
- 300 ml heavy cream
- butter (for the dish)
- 2 tbsp breadcrumbs
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into very thin strips, thinner than french fries, or slice them thinly.
- 3. Peel the onions and dice them finely.
- 4. Heat butter in a pan and sauté the onions until they become translucent.
- 5. Remove the onions from the pan and set them aside.
- 6. Rinse the anchovy fillets thoroughly under running water.
- 7. Pat the anchovies dry with a kitchen towel.
- 8. Cut the anchovies into small pieces.
- 9. Grease a baking dish well with butter.
- 10. Place a layer of potato strips into the baking dish.
- 11. Spread a layer of the prepared onions on top.
- 12. Add a layer of the anchovy pieces.
- 13. Season this layer with a pinch of salt and plenty of black pepper.
- 14. Repeat the layers of potatoes, onions, and anchovies until all ingredients are used up.
- 15. Pour 200 grams of cream over the top layer.
- 16. Preheat the oven to 175 degrees Celsius fan-forced.
- 17. Place the baking dish in the preheated oven.
- 18. Bake the gratin for about 35 minutes.
- 19. Remove the baking dish from the oven briefly.
- 20. Pour the remaining cream over the gratin.
- 21. Sprinkle breadcrumbs evenly over the top.
- 22. Place the baking dish back into the oven.
- 23. Bake the gratin for another 15 minutes until the top is golden brown and crispy.
