🍽️ Crispy Potato Gratin

Ingredients
- 1 clove garlic
- 2 kg waxy potatoes
- 500 ml whipping cream
- 500 ml milk
- 50 g crème fraîche
- salt
- pepper (from the mill)
- nutmeg
- 100 g grated cheese (e.g. Gruyère, Emmentaler)
- 1 sprig rosemary
- chili flakes
Instructions
- 1. Preheat the oven to 180 degrees Celsius using the top and bottom heat setting.
- 2. Peel the garlic clove. Rub the inside of the baking dishes with it.
- 3. Wash the potatoes thoroughly. Then peel them.
- 4. Slice the potatoes into very thin slices. You can also use a slicer for this.
- 5. Layer the potato slices evenly into the prepared baking dish.
- 6. Whisk the cream, milk, cheese, and crème fraîche together in a bowl.
- 7. Season the liquid with salt, ground nutmeg, and black pepper.
- 8. Pour the seasoning mixture evenly over the potatoes in the dish.
- 9. Make sure the potatoes are just covered with the liquid. Add a little more or less cream if necessary.
- 10. Place the baking dish in the preheated oven. Bake the gratin for 40 to 50 minutes until golden brown.
- 11. Test for doneness with a fork. The potatoes are done when the fork inserts and removes with ease.
- 12. Strip the needles from the rosemary sprigs. Sprinkle them over the finished gratin.
- 13. Sprinkle some chili flakes over it. Serve the dish hot.
