  1. 1. Wash the potatoes thoroughly and boil them in salted water for about 30 minutes until tender.
  2. 2. Drain the potatoes, peel them, and press them through a potato ricer.
  3. 3. Let the pressed potatoes steam briefly to allow moisture to evaporate.
  4. 4. Mix the cooled potatoes with flour, one egg, and salt to form a smooth dough that no longer sticks.
  5. 5. Cover the dough and let it rest for 15 minutes.
  6. 6. Dust your work surface with flour and roll the dough into ropes about 1.5 cm in diameter.
  7. 7. Cut the dough ropes into pieces about 2 cm long.
  8. 8. Roll each gnocchi piece over the tines of a fork to create the classic groove.
  9. 9. Place the finished gnocchi on the floured surface and cover them until you are ready to cook them.
  10. 10. Remove the skin from the sausages and cut them into small pieces.
  11. 11. Peel the shallot and garlic and chop both finely.
  12. 12. Heat oil in a pan and sauté the sausage pieces, shallot, and garlic for 2 to 3 minutes.
  13. 13. Add the tomatoes to the pan and let the sauce simmer for about 10 minutes on low heat, stirring occasionally.
  14. 14. Pluck the basil leaves from the stems.
  15. 15. Set aside a few fresh basil leaves for garnish.
  16. 16. Chop the remaining basil roughly and stir it into the sauce.
  17. 17. Season the sauce to taste with salt and pepper.
  18. 18. Boil the gnocchi in salted water for about 5 minutes until they float to the surface.
  19. 19. Drain the gnocchi and distribute them onto the plates.
  20. 20. Pour the warm sauce over the gnocchi.
  21. 21. Sprinkle the dish with grated Parmesan cheese.
  22. 22. Garnish with the reserved basil leaves and serve the dish immediately.
