  2. 2. Wash the vegetables thoroughly.
  3. 3. Remove the tough stems and outer leaves from the leek.
  4. 4. Peel the onion and the garlic.
  5. 5. Dice all the prepared ingredients into small cubes.
  6. 6. Heat some oil in a pot.
  7. 7. Add the diced ingredients to the hot oil.
  8. 8. Sauté the vegetables briefly until fragrant.
  9. 9. Stir curry powder into the vegetables.
  10. 10. Deglaze the mixture with vegetable broth.
  11. 11. Season the stew with salt and pepper.
  12. 12. Add the fresh marjoram sprigs to the pot.
  13. 13. Let the stew simmer on low heat for about 20 minutes.
  14. 14. Taste the stew one last time at the end.
  15. 15. Remove the cooked marjoram sprigs from the pot.
  16. 16. Serve the stew onto plates or into bowls.
  17. 17. Garnish the dish with fresh marjoram leaves.
  18. 18. Serve the stew hot.
