🍽️ Crispy Oven Potato Wedges

Ingredients
- 100 kg waxy potatoes
- salt
- pepper from the mill
- 50 ml olive oil
- mayonnaise (for serving)
- 1 spring onion
Instructions
- 1. Wash the potatoes thoroughly under running water. Peel them only if you prefer. Cut the potatoes into thick wedges.
- 2. Dry the potato wedges very well with kitchen paper or a clean cloth. This ensures crispy results.
- 3. Season the wedges with salt and pepper. Brush them with oil so they turn golden brown.
- 4. Grease a baking tray with a little oil. Place the potato wedges on it in a single layer.
- 5. Preheat the oven to 220 degrees Celsius with top and bottom heat. Place the tray in the center of the oven.
- 6. Bake the wedges for about 20 minutes. Turn them several times so that all sides brown evenly.
- 7. Wash the spring onions. Cut them into very fine, diagonal rings.
- 8. Serve the hot potato wedges. Add a dollop of mayonnaise and sprinkle the spring onions over them.
