  1. 1. Wash the potatoes thoroughly under running water. Peel them only if you prefer. Cut the potatoes into thick wedges.
  2. 2. Dry the potato wedges very well with kitchen paper or a clean cloth. This ensures crispy results.
  3. 3. Season the wedges with salt and pepper. Brush them with oil so they turn golden brown.
  4. 4. Grease a baking tray with a little oil. Place the potato wedges on it in a single layer.
  5. 5. Preheat the oven to 220 degrees Celsius with top and bottom heat. Place the tray in the center of the oven.
  6. 6. Bake the wedges for about 20 minutes. Turn them several times so that all sides brown evenly.
  7. 7. Wash the spring onions. Cut them into very fine, diagonal rings.
  8. 8. Serve the hot potato wedges. Add a dollop of mayonnaise and sprinkle the spring onions over them.
