🍽️ Creamy Potato Soup with Crispy Bacon

Ingredients
- 1 onion
- 800 g floury potatoes
- 1 tbsp olive oil
- 750 ml vegetable broth
- 150 ml cooking cream
- 1 head frisée lettuce
- 30 g turkey bacon (2 slices)
- 0.5 bunch parsley
- salt
- pepper
Instructions
- 1. Peel the onion and cut it into fine cubes.
- 2. Peel the potatoes, wash them, and cut them into large chunks.
- 3. Heat the oil in a pot.
- 4. Sauté the onion cubes until translucent.
- 5. Add the potato chunks and sauté them briefly.
- 6. Pour the vegetable broth and cream into the pot.
- 7. Simmer the soup covered on low heat for about 20 minutes.
- 8. Wash the frisée lettuce, spin it dry, and chop it finely.
- 9. Halve the bacon slices.
- 10. Fry the bacon in a non-stick pan without extra fat until crispy.
- 11. Let the bacon drain briefly on kitchen paper.
- 12. Wash the parsley and shake it dry.
- 13. Pluck the parsley leaves and chop them finely.
- 14. Puree the soup finely with a hand blender.
- 15. Stir the chopped lettuce into the soup.
- 16. Blend the mixture briefly again.
- 17. Season the soup with salt and pepper.
- 18. Sprinkle the chopped parsley over the soup.
- 19. Place the crispy bacon decoratively on top of the soup.
- 20. Serve the soup hot.
