🍽️ Cloud-Soft Potato Cream

Ingredients
- 400 g potatoes
- 1 bunch vegetable mix
- 2 tbsp olive oil
- 800 ml vegetable broth
- 150 g crème fraîche
- salt
- pepper (from the mill)
- paprika powder
Instructions
- 1. Rinse the vegetables under running water.
- 2. Cut the vegetables into small cubes.
- 3. Peel the potatoes.
- 4. Cut the potatoes into small cubes.
- 5. Heat some oil in a pot.
- 6. Add the vegetables and potatoes to the hot oil.
- 7. Fry the ingredients for 3 minutes.
- 8. Pour the broth into the pot.
- 9. Bring the mixture to a boil.
- 10. Place a lid on the pot.
- 11. Let the soup simmer for 15 minutes.
- 12. Puree the soup until creamy with a hand blender.
- 13. Stir in the crème fraîche.
- 14. Season the soup with salt.
- 15. Season the soup with pepper.
- 16. Pour the soup into cups.
- 17. Sprinkle some paprika powder over it.
- 18. Serve the soup.
