  1. 1. Wash the soup vegetables thoroughly and remove any tough parts or ends.
  2. 2. Cut the prepared vegetables into small pieces.
  3. 3. Peel the potatoes and cut them into small cubes.
  4. 4. Heat oil in a pot and sauté the vegetables and potatoes in it for about 3 minutes.
  5. 5. Pour in the vegetable broth and bring the mixture to a boil.
  6. 6. Reduce the heat, cover the pot, and let the soup simmer gently for 15 minutes.
  7. 7. Puree the soup afterwards using a hand blender or potato masher until smooth.
  8. 8. Stir the crème fraîche into the warm soup.
  9. 9. Season the soup finally with salt and pepper to taste.
  10. 10. Finely chop the parsley for the garnish.
  11. 11. Press the garlic through and grate the lemon zest.
  12. 12. Mix the parsley, garlic, and lemon zest in a small bowl.
  13. 13. Serve the finished soup in bowls and sprinkle with the herb mixture.
