🍽️ Creamy Potato Soup with Fresh Herb Topping

Ingredients
- 400 g potatoes
- 1 bunch soup vegetables
- 2 tbsp olive oil
- 800 ml vegetable broth
- 1 bunch parsley
- 2 garlic cloves
- 1 lemon (zest)
- 150 g crème fraîche
- salt
- pepper (from the mill)
Instructions
- 1. Wash the soup vegetables thoroughly and remove any tough parts or ends.
- 2. Cut the prepared vegetables into small pieces.
- 3. Peel the potatoes and cut them into small cubes.
- 4. Heat oil in a pot and sauté the vegetables and potatoes in it for about 3 minutes.
- 5. Pour in the vegetable broth and bring the mixture to a boil.
- 6. Reduce the heat, cover the pot, and let the soup simmer gently for 15 minutes.
- 7. Puree the soup afterwards using a hand blender or potato masher until smooth.
- 8. Stir the crème fraîche into the warm soup.
- 9. Season the soup finally with salt and pepper to taste.
- 10. Finely chop the parsley for the garnish.
- 11. Press the garlic through and grate the lemon zest.
- 12. Mix the parsley, garlic, and lemon zest in a small bowl.
- 13. Serve the finished soup in bowls and sprinkle with the herb mixture.
