🍽️ Creamy Potato Sandwich

Ingredients
- 200 g potatoes (starchy variety)
- 1 egg
- 1 onion
- 2 anchovy fillets in oil
- 1 gherkin
- 1 bunch chives
- 50 g soft butter
- 1 tsp hot mustard
- 2 tbsp sour cream
- salt
- paprika powder
- 8 slices sandwich bread
Instructions
- 1. Wash the potatoes and boil them in salted water until they are soft.
- 2. Boil the egg in a separate pot until hard-boiled.
- 3. Rinse the boiled egg immediately with cold water to make it easier to peel.
- 4. Let both the potatoes and the egg cool down completely.
- 5. Peel the onion and chop it very finely.
- 6. Chop the anchovies and the cucumber very finely as well.
- 7. Wash the chives and cut them into small rings.
- 8. Peel the cooled egg and separate the yolk from the white.
- 9. Chop the egg white finely.
- 10. Mash the egg yolk with a fork.
- 11. Mix the mashed egg yolk with the butter and mustard until smooth.
- 12. Peel the cooled potatoes.
- 13. Mash the potatoes finely (use a potato masher or a fork).
- 14. Fold in the chopped ingredients (onion, anchovies, cucumber, chives, and egg white) into the potato-butter mixture.
- 15. Stir in the sour cream.
- 16. Season the filling with salt and paprika powder to taste.
- 17. Spread the potato cream evenly over four slices of bread.
- 18. Place the remaining bread slices on top and press the sandwiches down slightly.
- 19. Cut each sandwich into four equal pieces.
