  1. 1. Wash the potatoes and boil them in salted water until they are soft.
  2. 2. Boil the egg in a separate pot until hard-boiled.
  3. 3. Rinse the boiled egg immediately with cold water to make it easier to peel.
  4. 4. Let both the potatoes and the egg cool down completely.
  5. 5. Peel the onion and chop it very finely.
  6. 6. Chop the anchovies and the cucumber very finely as well.
  7. 7. Wash the chives and cut them into small rings.
  8. 8. Peel the cooled egg and separate the yolk from the white.
  9. 9. Chop the egg white finely.
  10. 10. Mash the egg yolk with a fork.
  11. 11. Mix the mashed egg yolk with the butter and mustard until smooth.
  12. 12. Peel the cooled potatoes.
  13. 13. Mash the potatoes finely (use a potato masher or a fork).
  14. 14. Fold in the chopped ingredients (onion, anchovies, cucumber, chives, and egg white) into the potato-butter mixture.
  15. 15. Stir in the sour cream.
  16. 16. Season the filling with salt and paprika powder to taste.
  17. 17. Spread the potato cream evenly over four slices of bread.
  18. 18. Place the remaining bread slices on top and press the sandwiches down slightly.
  19. 19. Cut each sandwich into four equal pieces.
