  3. 3. Bring a large pot of water and a pinch of salt to a boil.
  4. 4. Add the potato pieces to the boiling water.
  5. 5. Cook the potatoes over medium heat for about 30 minutes until tender.
  6. 6. Drain the potatoes in a colander and let them drip dry well.
  7. 7. Heat the cream and milk in a small saucepan until warm.
  8. 8. Pour the warm milk mixture into a large mixing bowl.
  9. 9. Add the butter to the milk mixture.
  10. 10. Press the drained potatoes through a potato ricer directly into the bowl.
  11. 11. Stir the potatoes with the milk mixture until creamy.
  12. 12. Season the mash to taste with salt and ground nutmeg.
