🍽️ Crispy Potato and Minced Meat Casserole

Ingredients
- 500 g firm-cooking potatoes
- salt
- 400 g leek
- 1 onion
- 1 clove garlic
- 350 g mixed minced meat
- 1 tbsp vegetable oil
- 1 tbsp ajvar
- pepper
- 1 tsp dried rosemary
- 1 tbsp lactose-free butter
- 1 tbsp flour
- 400 ml lactose-free milk (or soy milk)
- 100 g grated lactose-free cheese (e.g. Emmentaler)
- nutmeg
- lactose-free butter (for the dish)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Boil the potatoes in salted water for 15 to 20 minutes.
- 3. Remove the potatoes from the heat.
- 4. Let the potatoes drain and steam dry.
- 5. Peel the cooled potatoes.
- 6. Cut the potatoes into small, bite-sized pieces.
- 7. Preheat the oven to 180 degrees Celsius with fan circulation.
- 8. Clean the leek thoroughly.
- 9. Wash the leek well.
- 10. Slice the leek into 1 cm thick rings.
- 11. Peel the onion.
- 12. Peel the garlic.
- 13. Chop the onion finely.
- 14. Chop the garlic finely.
- 15. Heat vegetable oil in a pot.
- 16. Fry the onion and garlic in the oil.
- 17. Add the minced meat.
- 18. Fry the minced meat until it is crumbly.
- 19. Stir in the ajvar (a paprika-based spread specialty).
- 20. Let the mixture cook briefly.
- 21. Season the filling with salt.
- 22. Season the filling with pepper.
- 23. Season the filling with rosemary.
- 24. Melt the butter in a small pot.
- 25. Dust the melted butter with flour.
- 26. Pour in the milk gradually.
- 27. Stir constantly while doing so.
- 28. Bring the sauce to a boil once.
- 29. Stir two-thirds of the cheese into the sauce.
- 30. Season the sauce with salt.
- 31. Season the sauce with pepper.
- 32. Season the sauce with nutmeg.
- 33. Grease a baking dish.
- 34. Spread the potatoes in the dish.
- 35. Spread the leek in the dish.
- 36. Spread the minced meat mixture in the dish.
- 37. Pour the béchamel sauce (a white sauce made from butter, flour, and milk) over it.
- 38. Sprinkle the remaining cheese evenly on top.
- 39. Bake the casserole in the preheated oven for 25 to 30 minutes.
