🍽️ Potato and Onion Stew with Fresh Basil

Ingredients
- 4 red onions
- 1 kg waxy potatoes
- 2 tbsp olive oil
- salt
- pepper (from the mill)
- 1 bay leaf
- 400 ml vegetable broth
- 2 tbsp freshly chopped basil
Instructions
- 1. Peel the onions and cut them in half lengthwise.
- 2. Cut the onion halves into wedges.
- 3. Peel the potatoes.
- 4. Cut the potatoes into large cubes.
- 5. Heat the oil in a pot.
- 6. Add the onion wedges and potato cubes to the pot.
- 7. Sauté the vegetables briefly.
- 8. Season with salt and pepper.
- 9. Add the bay leaf to the pot.
- 10. Pour in the vegetable broth.
- 11. Cover the pot with a lid.
- 12. Simmer the stew on low heat for approx. 20 minutes until the vegetables are tender.
- 13. Taste the dish one last time before serving.
- 14. Sprinkle fresh basil over the stew.
