  2. 2. Add the sugar to the lemon-water mixture and bring everything to a boil.
  3. 3. Peel the apples in the meantime and remove the stems and cores.
  4. 4. Cut the apples into quarters and remove the core.
  5. 5. Cut the apple pieces into small cubes.
  6. 6. Add the apple cubes to the hot lemon syrup.
  7. 7. Add the cinnamon stick and the lemon zest.
  8. 8. Let everything simmer until the apple pieces become soft and start to break down.
  9. 9. Remove the pot from the heat and let the sauce cool down.
  10. 10. Remove the lemon zest and the cinnamon stick from the cooled sauce.
  11. 11. Stir the sauce occasionally to prevent it from sticking.
  12. 12. Peel the potatoes and the onion for the pancakes.
  13. 13. Grate the potatoes into a bowl.
  14. 14. Grate the onion directly onto the potatoes.
  15. 15. Pour off the liquid released from the potato-onion mixture.
  16. 16. Stir the flour and the egg yolk into the potato mixture.
