🍽️ Crispy Potato-Onion Pancakes with Homemade Applesauce

Ingredients
- 4 tbsp lemon juice
- 1 tbsp sugar (to taste)
- 2 apples (e.g. Boskop)
- 1 piece cinnamon stick
- 1 piece untreated lemon peel
- 1 kg potatoes
- 1 onion
- 1 cup matzo meal
- 1 egg yolk
- salt
- pepper
- vegetable oil (for frying)
Instructions
- 1. Mix the lemon juice with 100 milliliters of water in a pot.
- 2. Add the sugar to the lemon-water mixture and bring everything to a boil.
- 3. Peel the apples in the meantime and remove the stems and cores.
- 4. Cut the apples into quarters and remove the core.
- 5. Cut the apple pieces into small cubes.
- 6. Add the apple cubes to the hot lemon syrup.
- 7. Add the cinnamon stick and the lemon zest.
- 8. Let everything simmer until the apple pieces become soft and start to break down.
- 9. Remove the pot from the heat and let the sauce cool down.
- 10. Remove the lemon zest and the cinnamon stick from the cooled sauce.
- 11. Stir the sauce occasionally to prevent it from sticking.
- 12. Peel the potatoes and the onion for the pancakes.
- 13. Grate the potatoes into a bowl.
- 14. Grate the onion directly onto the potatoes.
- 15. Pour off the liquid released from the potato-onion mixture.
- 16. Stir the flour and the egg yolk into the potato mixture.
- 17. Work the ingredients into a thick mass.
- 18. Season the mixture with salt and pepper.
- 19. Heat a little oil in a non-stick pan.
- 20. Place a spoonful of the mixture into the hot pan.
- 21. Spread the mixture into a small pancake.
- 22. Fry the pancakes in batches over medium heat.
- 23. Fry the pancakes on both sides until golden brown, 2 to 3 minutes each side.
- 24. Keep the finished pancakes warm in the oven at 70 degrees Celsius with fan.
- 25. Repeat the process until all pancakes are fried.
- 26. Serve the warm pancakes with the cold applesauce.
