🍲 Hearty Stew with Potatoes, Savoy Cabbage, and Pancetta

Ingredients
- 2 onions
- 150 g pancetta (or other bacon)
- ghee (for frying)
- 2 carrots
- 300 g potatoes
- 0.5 head savoy cabbage
- 2 bay leaves
- 1 tsp caraway seeds
- salt
- pepper (from the mill)
Instructions
- 1. Dice the onions finely.
- 2. Cut the pancetta into thin strips.
- 3. Peel the carrots and slice them thinly.
- 4. Peel the potatoes and cut them into cubes.
- 5. Wash the savoy cabbage and cut it into thin strips.
- 6. Heat some ghee in a pot.
- 7. Fry the pancetta strips in the hot fat.
- 8. Add the onion cubes and sweat them briefly.
- 9. Add all the prepared vegetables to the pot.
- 10. Continue to sweat the vegetables until they smell fragrant.
- 11. Add the bay leaves and caraway seeds.
- 12. Deglaze everything with vegetable broth.
- 13. Bring the soup to a boil.
- 14. Let the stew simmer for about 15 minutes.
- 15. Check if the potatoes are soft.
- 16. Season the soup finally with salt and pepper.
