  1. 1. Wash the potatoes thoroughly under running water.
  2. 2. Cut the potatoes into thick wedges.
  3. 3. Season the wedges with salt, pepper, and paprika powder.
  4. 4. Toss the potatoes well so they are evenly seasoned.
  5. 5. Line a baking tray with baking paper.
  6. 6. Spread the potato wedges on the tray.
  7. 7. Wash the rosemary and shake it dry.
  8. 8. Pluck the needles off the rosemary sprig.
  9. 9. Sprinkle the rosemary needles over the potatoes.
  10. 10. Preheat the oven to 200 °C (convection 180 °C or gas mark 3).
  11. 11. Drizzle the potatoes with a little oil.
  12. 12. Place the tray in the preheated oven.
  13. 13. Bake the wedges for 15 minutes.
  14. 14. Turn the potatoes once.
  15. 15. Bake them for another 15 to 20 minutes until done.
  16. 16. Remove the finished wedges from the oven.
  17. 17. Serve them best in a paper bag.
