🍽️ Your perfect potato tortilla with beans and bacon

Ingredients
- 200 g green beans
- salt
- 600 g boiled potatoes (from the day before; waxy)
- 3 tbsp rapeseed oil
- 140 g diced breakfast bacon
- 10 eggs
- salt
- pepper (from the mill)
- air-dried ham (for garnishing)
- fresh thyme (for garnishing)
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Wash the beans and trim off the hard ends.
- 3. Boil the beans for 6 to 8 minutes in boiling salted water.
- 4. Shock the beans immediately in ice water to keep their color.
- 5. Drain the beans and cut them into small pieces.
- 6. Peel the potatoes and slice them into thin rounds.
- 7. Heat the rapeseed oil in an oven-safe, non-stick pan.
- 8. Fry the potato slices and bacon in the pan for about 5 minutes.
- 9. Turn the ingredients occasionally so they brown evenly.
- 10. Whisk the eggs in a separate bowl.
- 11. Season the eggs with salt and pepper to taste.
- 12. Add the prepared beans to the potatoes in the pan.
- 13. Pour the whisked eggs over the entire contents of the pan.
- 14. Place the pan in the preheated oven.
- 15. Bake the tortilla for about 10 minutes until the egg is set.
- 16. Remove the tortilla from the oven and cut it into bite-sized pieces.
- 17. Stack the tortilla pieces on the plates.
- 18. Garnish the dish with air-dried ham and fresh thyme.
- 19. Serve the tortilla warm or cold.
