  4. 4. Shock the beans immediately in ice water to keep their color.
  5. 5. Drain the beans and cut them into small pieces.
  6. 6. Peel the potatoes and slice them into thin rounds.
  7. 7. Heat the rapeseed oil in an oven-safe, non-stick pan.
  8. 8. Fry the potato slices and bacon in the pan for about 5 minutes.
  9. 9. Turn the ingredients occasionally so they brown evenly.
  10. 10. Whisk the eggs in a separate bowl.
  11. 11. Season the eggs with salt and pepper to taste.
  12. 12. Add the prepared beans to the potatoes in the pan.
  13. 13. Pour the whisked eggs over the entire contents of the pan.
  14. 14. Place the pan in the preheated oven.
  15. 15. Bake the tortilla for about 10 minutes until the egg is set.
  16. 16. Remove the tortilla from the oven and cut it into bite-sized pieces.
  17. 17. Stack the tortilla pieces on the plates.
  18. 18. Garnish the dish with air-dried ham and fresh thyme.
