  6. 6. Press the still warm potatoes through a potato ricer.
  7. 7. Add the butter, egg yolks, flour, salt, pepper, and nutmeg to the potato mixture.
  8. 8. Peel the garlic and press it through a garlic press.
  9. 9. Add the pressed garlic to the potato mixture.
  10. 10. Finely chop the coriander greens and add them.
  11. 11. Knead everything into a homogeneous dough.
