🍽️ Crispy Potato Sesame Croquettes

Ingredients
- 1 kg floury potatoes
- salt
- 2 tbsp butter
- 3 egg yolks (from large eggs)
- 1 tbsp flour
- pepper
- freshly grated nutmeg
- 2 garlic cloves
- 2 tbsp finely chopped coriander leaves
- 5 tbsp sesame seeds
- ghee (for frying)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into evenly sized pieces.
- 3. Place the potato pieces in a pot with salted water.
- 4. Boil the potatoes for about 25 minutes until they are soft.
- 5. Drain the water and let the potatoes steam dry for a moment.
- 6. Press the still warm potatoes through a potato ricer.
- 7. Add the butter, egg yolks, flour, salt, pepper, and nutmeg to the potato mixture.
- 8. Peel the garlic and press it through a garlic press.
- 9. Add the pressed garlic to the potato mixture.
- 10. Finely chop the coriander greens and add them.
- 11. Knead everything into a homogeneous dough.
- 12. Check the consistency: The dough should hold together well.
- 13. If the dough is too wet, add a little more flour.
- 14. If the dough is too dry, add a little more egg yolk.
- 15. Shape short, thumb-thick croquettes from the mixture.
- 16. Roll the croquettes in sesame seeds until they are completely covered.
- 17. Heat ghee (clarified butter) in a frying pan.
- 18. Fry the croquettes in batches until golden yellow in the pan.
