🍽️ Crispy Potato, Celery, and Apple Salad

Ingredients
- 800 g firm-cooking potatoes
- salt
- 2 stalks celery
- 1 tart apple (e.g. Granny Smith)
- 2 tbsp lemon juice
- 2 tbsp grape seed oil
- 100 g yogurt
- 2 tbsp crème légère
- 1 tbsp grainy mustard
- 0.5 tsp peppercorns
- 0.5 tsp sea salt
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Slice the potatoes into even rounds.
- 3. Bring a pot of salted water to a boil.
- 4. Boil the potato slices in the water for about 15 minutes until tender.
- 5. Drain the water and let the potatoes cool down to lukewarm.
- 6. Wash the celery and remove any tough strings.
- 7. Slice the celery into very thin rounds or grate it finely.
- 8. Set aside a few celery leaves for garnish.
- 9. Wash the apple and cut it into four quarters.
- 10. Remove the core from each apple quarter.
- 11. Cut the apple quarters into thin wedges.
- 12. Arrange the cooled potatoes, celery, and apple wedges decoratively on a large platter.
- 13. Drizzle lemon juice and oil over the salad.
- 14. Whisk the yogurt with the crème légère and mustard in a small bowl.
- 15. Drizzle the dressing evenly over the salad.
- 16. Grind pepper and salt into a fine powder using a mortar and pestle.
- 17. Sprinkle the ground spice over the salad.
- 18. Garnish the salad with the reserved celery leaves and serve.
