  1. 1. Preheat your oven to 200 degrees Celsius fan-forced.
  2. 2. Wash the potatoes thoroughly under running water.
  3. 3. Cut the potatoes in half or into quarters.
  4. 4. Line a baking tray with baking paper.
  5. 5. Spread the potatoes evenly on the tray.
  6. 6. Drizzle the oil over the potatoes.
  7. 7. Season everything generously with salt and pepper.
  8. 8. Toss the potatoes well so they are evenly seasoned.
  9. 9. Place the tray in the oven.
  10. 10. Bake the potatoes for about 30 minutes until golden brown.
  11. 11. Turn the potatoes once or twice during baking.
  12. 12. Remove the tray from the oven.
  13. 13. Let the potatoes cool down to lukewarm.
  14. 14. Pour the lemon juice over the cooled potatoes.
  15. 15. Taste the mixture and adjust seasoning with salt and pepper.
  16. 16. Crumble the feta cheese into small pieces with your hands.
  17. 17. Cut the ham into small cubes or strips.
  18. 18. Gently mix the potatoes with the feta and the ham.
  19. 19. Pick fresh thyme leaves off the stems.
  20. 20. Cut the lemons in half.
  21. 21. Serve the salad garnished with thyme and lemon halves.
