🥗 Crispy Potato, Ham and Feta Salad

Ingredients
- 1 kg firm-boiling potatoes
- 4 tbsp olive oil
- sea salt
- pepper (from the mill)
- 2 tbsp lemon juice
- 150 g feta
- 100 g Parma ham (in thin slices)
- 2 sprigs thyme
- 2 unpeeled lemons
Instructions
- 1. Preheat your oven to 200 degrees Celsius fan-forced.
- 2. Wash the potatoes thoroughly under running water.
- 3. Cut the potatoes in half or into quarters.
- 4. Line a baking tray with baking paper.
- 5. Spread the potatoes evenly on the tray.
- 6. Drizzle the oil over the potatoes.
- 7. Season everything generously with salt and pepper.
- 8. Toss the potatoes well so they are evenly seasoned.
- 9. Place the tray in the oven.
- 10. Bake the potatoes for about 30 minutes until golden brown.
- 11. Turn the potatoes once or twice during baking.
- 12. Remove the tray from the oven.
- 13. Let the potatoes cool down to lukewarm.
- 14. Pour the lemon juice over the cooled potatoes.
- 15. Taste the mixture and adjust seasoning with salt and pepper.
- 16. Crumble the feta cheese into small pieces with your hands.
- 17. Cut the ham into small cubes or strips.
- 18. Gently mix the potatoes with the feta and the ham.
- 19. Pick fresh thyme leaves off the stems.
- 20. Cut the lemons in half.
- 21. Serve the salad garnished with thyme and lemon halves.
- 22. You can also present the salad nicely in glasses.
