🍰 Crispy Potato Rösti with Smoked Salmon

Ingredients
- 700 g firm-boiling potatoes
- salt
- pepper (from the mill)
- 0.5 tsp ground caraway
- 8 tbsp olive oil
- 4 tbsp milk
- 1 bunch chives
- 1 lemon (juice)
- 400 g smoked salmon (sliced)
- 150 g sour cream
- 4 tbsp horseradish (from the jar)
- 50 g capers
Instructions
- 1. Boil the potatoes in plenty of salted water until they are soft.
- 2. Drain the water and let the potatoes steam dry.
- 3. Peel the cooled potatoes.
- 4. Store the peeled potatoes in the fridge overnight.
- 5. Grate the cold potatoes finely the next day.
- 6. Season the grated potatoes with salt, pepper, and cumin.
- 7. Heat 4 tablespoons of olive oil in a large frying pan.
- 8. Spread the potato mixture evenly in the hot pan.
- 9. Press the mixture firmly together with a spatula to form a flat cake.
- 10. Fry the rösti over medium heat until the bottom is golden brown and crispy.
- 11. Pour in a little milk while frying; this makes the rösti extra crispy.
- 12. Place a plate on top of the pan to safely flip the rösti.
- 13. Slide the rösti back into the pan to fry the other side.
- 14. Fry the second side until golden brown as well.
- 15. Remove the finished rösti from the pan and place it on a cutting board.
- 16. Cut the rösti into quarters or eighths.
- 17. Wash the chives and shake them dry.
- 18. Cut the chives into fine rings.
- 19. Mix the remaining olive oil with lemon juice and the chives.
- 20. Top the rösti pieces loosely with smoked salmon.
- 21. Add sour cream, horseradish, and capers as a topping.
- 22. Drizzle everything with the prepared chive-lemon oil.
