🥗 Warm Potato Salad with Smoked Salmon

Ingredients
- 750 g firm-boiling potatoes
- 1 onion
- 125 ml vegetable broth
- salt
- pepper (from the mill)
- 40 g watercress
- 2 lettuce leaves (e.g. Batavia, Romana)
- 4 tbsp chopped mixed herbs (e.g. : parsley, chives, dill, basil, chervil...)
- 2 tbsp small capers
- 6 tbsp white wine vinegar
- 1 tsp pumpkin seed oil
- 3 tbsp sunflower oil
- 1 pinch sugar
- 200 g smoked salmon
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Peel the potatoes.
- 3. Bring a pot of salted water to a boil.
- 4. Add the potatoes to the boiling water.
- 5. Cover the pot with a lid.
- 6. Cook the potatoes for about 25 minutes until tender.
- 7. Peel the onion.
- 8. Dice the onion finely.
- 9. Pour the vegetable broth into a small pot.
- 10. Bring the vegetable broth to a boil.
- 11. Add the diced onion to the boiling broth.
- 12. Simmer the onions for 2 to 3 minutes.
- 13. Slice the hot potatoes into thick rounds.
- 14. Pour the hot onion broth over the potato slices.
- 15. Season the potatoes with salt and pepper.
- 16. Clean the watercress.
- 17. Wash the watercress.
- 18. Sort through the watercress to remove any bad leaves.
- 19. Spin the watercress dry.
- 20. Clean the salad leaves.
- 21. Wash the salad leaves.
- 22. Sort through the salad leaves to remove any bad leaves.
- 23. Spin the salad leaves dry.
- 24. Cut the salad leaves into thin strips.
- 25. Add the watercress and salad strips to the potatoes.
- 26. Add the fresh herbs and capers.
- 27. Add the vinegar to a bowl.
- 28. Add the pumpkin seed oil.
- 29. Add the sunflower oil.
- 30. Season the sauce with salt.
- 31. Season the sauce with pepper.
- 32. Add the sugar.
- 33. Whisk the salad dressing well.
- 34. Pour the salad dressing over the ingredients in the bowl.
- 35. Toss everything together well.
- 36. Taste the salad dressing again and adjust seasoning.
- 37. Plate the salad.
- 38. Slice the smoked salmon into strips.
- 39. Distribute the smoked salmon strips over the potato salad.
