🥗 Potato Radish Salad with Chives

Ingredients
- 800 g early potato
- salt
- 10 radishes
- 1 bunch chives
- 6 tbsp mayonnaise
- 2 tbsp sour cream
- 1 tsp medium-hot mustard
- 2 tbsp yogurt (3.5% fat)
- pepper (from the mill)
- 1 dash lemon juice
Instructions
- 1. Thoroughly wash the potatoes under running water.
- 2. Bring water to a boil and add some salt.
- 3. Add the potatoes to the boiling salted water.
- 4. Cook the potatoes for about 25 minutes until tender.
- 5. Wash the radishes under running water.
- 6. Remove the tough stems and root tips from the radishes.
- 7. Cut the radishes into small pieces.
- 8. Rinse the chives briefly.
- 9. Shake the chives dry.
- 10. Cut the chives into fine rings.
- 11. Mix mayonnaise, sour cream, mustard, and yogurt in a bowl.
- 12. Season the sauce with salt and pepper.
- 13. Add a splash of lemon juice to the sauce.
- 14. Drain the cooked potatoes.
- 15. Let the potatoes steam dry.
- 16. Let the potatoes cool down to lukewarm.
- 17. Cut the cooled potatoes into quarters.
- 18. Mix the potato quarters with the radishes.
- 19. Add the chopped chives to the salad.
- 20. Add the prepared salad cream.
- 21. Mix all ingredients well together.
- 22. Let the salad rest for a short while.
- 23. Taste the salad again and adjust seasoning if needed.
- 24. Serve the salad in small bowls.
