🍕 Crispy Pizza with Potato Dough and Apple

Ingredients
- 0.5 cube yeast (21 g)
- 1 pinch sugar
- 350 g flour
- 4 tbsp olive oil
- 1 tsp salt
- 200 g cream cheese
- 100 g crème fraîche
- 200 g waxy potatoes
- salt
- 2 apples
- 100 g pickled bell peppers (jar)
- pepper (from the mill)
- 100 g grated cheese (e.g. Emmental)
- 4 sprigs thyme
Instructions
- 1. Crumble the yeast into a large bowl.
- 2. Stir the yeast with the sugar and about 175 milliliters of lukewarm water until the yeast has dissolved.
- 3. Add the flour, the olive oil, and the salt to the yeast mixture.
- 4. Knead the ingredients into a smooth and pliable dough.
- 5. Cover the bowl and let the dough rise in a warm place for about 1 hour.
- 6. Preheat the oven to 240 degrees Celsius for top and bottom heat.
- 7. Place a baking sheet in the oven so it heats up along with the oven.
- 8. Divide the dough after rising into 4 equal parts.
- 9. Shape each part into a ball.
- 10. Lightly dust a work surface with flour.
- 11. Roll out the dough balls into oval flatbreads.
- 12. Place the dough flatbreads on baking paper.
- 13. Mix the cream cheese with the crème fraîche in a small bowl.
- 14. Spread the cheese cream evenly over the dough flatbreads.
- 15. Leave a border of about 1 centimeter wide free at the edge of the dough.
- 16. Peel the potatoes.
- 17. Slice the potatoes into very thin slices or use a grater.
- 18. Bring a pot of salted water to a boil.
- 19. Add the potato slices to the boiling water for 3 to 4 minutes.
- 20. The potatoes should be almost, but not completely, cooked.
- 21. Remove the potatoes from the water and rinse them immediately with cold water to stop the cooking process.
- 22. Pat the potatoes dry with a kitchen towel.
- 23. Wash the apples thoroughly.
- 24. Cut the apples into four quarters.
- 25. Remove the core from each apple quarter.
- 26. Cut the apple quarters into thin wedges.
- 27. Take the peppers out of the can or jar and let them drain well.
- 28. Distribute the drained potatoes, apple wedges, and peppers over the pizzas.
- 29. Season the toppings with salt and pepper to taste.
- 30. Spread the cheese evenly over the toppings.
- 31. Pluck the thyme leaves from the stems and sprinkle them over the pizzas.
- 32. Carefully lift the baking paper with the pizzas onto the hot baking sheet in the oven.
- 33. Bake the pizzas for 10 to 15 minutes until the edge is golden brown.
- 34. Remove the pizzas from the oven and serve them immediately.
