  1. 1. Crumble the yeast into a large bowl.
  2. 2. Stir the yeast with the sugar and about 175 milliliters of lukewarm water until the yeast has dissolved.
  3. 3. Add the flour, the olive oil, and the salt to the yeast mixture.
  4. 4. Knead the ingredients into a smooth and pliable dough.
  5. 5. Cover the bowl and let the dough rise in a warm place for about 1 hour.
  6. 6. Preheat the oven to 240 degrees Celsius for top and bottom heat.
  7. 7. Place a baking sheet in the oven so it heats up along with the oven.
  8. 8. Divide the dough after rising into 4 equal parts.
  9. 9. Shape each part into a ball.
  10. 10. Lightly dust a work surface with flour.
  11. 11. Roll out the dough balls into oval flatbreads.
  12. 12. Place the dough flatbreads on baking paper.
  13. 13. Mix the cream cheese with the crème fraîche in a small bowl.
  14. 14. Spread the cheese cream evenly over the dough flatbreads.
  15. 15. Leave a border of about 1 centimeter wide free at the edge of the dough.
  16. 16. Peel the potatoes.
  17. 17. Slice the potatoes into very thin slices or use a grater.
  18. 18. Bring a pot of salted water to a boil.
  19. 19. Add the potato slices to the boiling water for 3 to 4 minutes.
  20. 20. The potatoes should be almost, but not completely, cooked.
  21. 21. Remove the potatoes from the water and rinse them immediately with cold water to stop the cooking process.
  22. 22. Pat the potatoes dry with a kitchen towel.
  23. 23. Wash the apples thoroughly.
  24. 24. Cut the apples into four quarters.
  25. 25. Remove the core from each apple quarter.
  26. 26. Cut the apple quarters into thin wedges.
  27. 27. Take the peppers out of the can or jar and let them drain well.
  28. 28. Distribute the drained potatoes, apple wedges, and peppers over the pizzas.
  29. 29. Season the toppings with salt and pepper to taste.
  30. 30. Spread the cheese evenly over the toppings.
  31. 31. Pluck the thyme leaves from the stems and sprinkle them over the pizzas.
  32. 32. Carefully lift the baking paper with the pizzas onto the hot baking sheet in the oven.
  33. 33. Bake the pizzas for 10 to 15 minutes until the edge is golden brown.
  34. 34. Remove the pizzas from the oven and serve them immediately.
