🍽️ Crispy Potato and Parsnip Fritters

Ingredients
- 400 g potatoes
- 500 g parsley root
- 30 g cornstarch
- 1 egg
- 100 g flour
- salt
- pepper (from the mill)
- nutmeg
- 2 sprigs parsley
- 3 tbsp rapeseed oil
Instructions
- 1. Peel the potatoes and the parsnips.
- 2. Grate the peeled ingredients coarsely.
- 3. Squeeze the grated potatoes with your hands to remove excess liquid.
- 4. Combine the squeezed potatoes in a bowl with the grated parsnips.
- 5. Add the starch, the egg, and the flour to the vegetable mixture.
- 6. Season the mixture with salt, pepper, and ground nutmeg.
- 7. Wash the fresh parsley and shake it dry.
- 8. Pluck the parsley leaves from the stems and chop them finely.
- 9. Fold the chopped parsley into the potato mixture.
- 10. Heat the oil in a frying pan.
- 11. Take one tablespoon of the mixture at a time and place it in the hot pan.
- 12. Press the portions flat with a spoon or spatula to form small fritters.
- 13. Fry the fritters for about 3 to 5 minutes until golden yellow.
- 14. Turn the fritters and fry for another 3 to 5 minutes on the other side.
- 15. Remove the finished fritters from the pan.
- 16. Place them on a plate lined with kitchen paper to absorb excess fat.
