  1. 1. Peel the potatoes and the parsnips.
  2. 2. Grate the peeled ingredients coarsely.
  3. 3. Squeeze the grated potatoes with your hands to remove excess liquid.
  4. 4. Combine the squeezed potatoes in a bowl with the grated parsnips.
  5. 5. Add the starch, the egg, and the flour to the vegetable mixture.
  6. 6. Season the mixture with salt, pepper, and ground nutmeg.
  7. 7. Wash the fresh parsley and shake it dry.
  8. 8. Pluck the parsley leaves from the stems and chop them finely.
  9. 9. Fold the chopped parsley into the potato mixture.
  10. 10. Heat the oil in a frying pan.
  11. 11. Take one tablespoon of the mixture at a time and place it in the hot pan.
  12. 12. Press the portions flat with a spoon or spatula to form small fritters.
  13. 13. Fry the fritters for about 3 to 5 minutes until golden yellow.
  14. 14. Turn the fritters and fry for another 3 to 5 minutes on the other side.
  15. 15. Remove the finished fritters from the pan.
  16. 16. Place them on a plate lined with kitchen paper to absorb excess fat.
