🍽️ Crispy Potato and Parsley Fritters

Ingredients
- 1 onion
- 600 g firm-cooking potatoes
- 2 eggs
- 1 tbsp cornstarch
- 40 g freshly chopped parsley
- salt
- pepper
- nutmeg
- 4 tbsp clarified butter
Instructions
- 1. Heat ghee in a non-stick frying pan over medium-high heat.
- 2. Peel the onion and cut it into very small dice.
- 3. Peel the potatoes and wash them thoroughly.
- 4. Grate the potatoes finely.
- 5. Add the diced onion, grated potatoes, eggs, starch, and parsley to a large bowl.
- 6. Mix all ingredients in the bowl thoroughly.
- 7. Season the mixture with salt, pepper, and ground nutmeg.
- 8. Form small, flat mounds from the mixture.
- 9. Place the mounds one by one into the hot pan.
- 10. Fry the fritters for 3 to 4 minutes on the first side until golden brown.
- 11. Turn the fritters and fry them for another 3 to 4 minutes on the other side until golden brown.
- 12. Repeat the process in batches until all fritters are fried.
- 13. Keep the finished fritters warm in the oven at 80 degrees Celsius if needed.
