  1. 1. Heat ghee in a non-stick frying pan over medium-high heat.
  2. 2. Peel the onion and cut it into very small dice.
  3. 3. Peel the potatoes and wash them thoroughly.
  4. 4. Grate the potatoes finely.
  5. 5. Add the diced onion, grated potatoes, eggs, starch, and parsley to a large bowl.
  6. 6. Mix all ingredients in the bowl thoroughly.
  7. 7. Season the mixture with salt, pepper, and ground nutmeg.
  8. 8. Form small, flat mounds from the mixture.
  9. 9. Place the mounds one by one into the hot pan.
  10. 10. Fry the fritters for 3 to 4 minutes on the first side until golden brown.
  11. 11. Turn the fritters and fry them for another 3 to 4 minutes on the other side until golden brown.
  12. 12. Repeat the process in batches until all fritters are fried.
  13. 13. Keep the finished fritters warm in the oven at 80 degrees Celsius if needed.
