  1. 1. Peel the carrots, wash them, and cut them into large chunks. Peel the potatoes, wash them too, and cut them into large chunks. Put everything in a pot, cover with salted water, and bring to a boil. Cover and cook over medium heat for 20 to 25 minutes.
  2. 2. Drain the carrots and potatoes well and return them to the pot. Add milk and butter, then mash everything smooth with a potato masher. Season with lemon juice, a pinch of freshly grated nutmeg, salt, and pepper.
  3. 3. Wash the parsley, shake it dry, and chop the leaves finely. Divide the potato-carrot mash onto four plates and serve it sprinkled with the chopped parsley.
