🍽️ Potato and Matjes Salad

Ingredients
- 600 g firm-cooking potatoes
- 400 g small red beets
- 1 onion
- 1 tart apple
- 50 g walnut kernels
- 6 matjes fillets
- 100 g sour cream
- 50 g yogurt
- 2 tbsp freshly chopped parsley
- 1 dash lemon juice
- 1 pinch sugar
- salt
- pepper
Instructions
- 1. Wash the potatoes and the beetroot thoroughly. Steam them together for about 30 minutes until tender. The beetroot may need a little more time. Let the potatoes cool down afterwards and cut them into small cubes. Peel the cooled beetroot and cut it into cubes as well.
- 2. Peel the onion and dice it finely. Peel the apple, cut it into quarters, remove the core, and dice the pieces. Roughly chop the walnuts. Pat the matjes dry and cut it into strips. Put all the prepared ingredients into a bowl.
- 3. Stir the sour cream with the yogurt, 1-2 tablespoons of water, and the parsley until smooth. Season the dressing with lemon juice, sugar, salt, and pepper. Fold the dressing into the salad.
- 4. Let the salad marinate for about 10 minutes and then serve it.
