🍽️ Crispy Potato-Corn Fritters with Plum-Onion Relish

Ingredients
- 600 g mealy potatoes
- 150 g corn kernels (can)
- 2 white onions
- 2 tbsp butter
- 2 tbsp sugar
- 250 ml white wine
- 1 sprig thyme
- 6 dried plums (pitted)
- 1 tbsp honey
- 2 eggs
- 100 g cottage cheese
- 2 tbsp sour cream
- 1 tbsp chives
- 2 tbsp finely chopped basil
- 200 g yogurt
- 1 tbsp finely chopped mint
- 2 tbsp lemon juice
- oil
- nutmeg
- salt
- pepper (from the mill)
Instructions
- 1. Peel the onions and cut them into coarse cubes.
- 2. Melt the butter in a pot until it foams slightly.
- 3. Add the sugar to the butter and let it caramelize slightly.
- 4. Add the onion cubes and toss them briefly in the pan.
- 5. Deglaze the mixture with white wine.
- 6. Add the thyme and let everything simmer on low heat.
- 7. Continue cooking until the liquid has almost completely evaporated.
- 8. Cut the plums into small cubes.
- 9. Stir the plum cubes and honey into the onion mixture.
- 10. Wash the potatoes thoroughly.
- 11. Boil the potatoes in salted water for about 25 minutes until tender.
- 12. Drain the potatoes and let them drip dry.
- 13. Peel the cooked potatoes.
- 14. Press the potatoes through a potato ricer into a bowl.
- 15. Add the eggs, salt, and nutmeg to the potatoes.
- 16. Stir the ingredients until smooth and homogeneous.
- 17. Stir the corn into the potato batter.
- 18. Mix the cottage cheese with the sour cream.
- 19. Finely chop the chives and basil and add them to the cheese.
- 20. Season the cheese mixture with salt and pepper.
- 21. Mix the yogurt with the lemon juice.
- 22. Season the yogurt sauce with salt, pepper, and mint.
- 23. Shape the potato mixture into flat patties about 1 cm thick.
- 24. Heat a non-stick pan.
- 25. Fry the fritters on each side for about 3 minutes until golden brown.
- 26. Place some yogurt sauce on the serving plates.
- 27. Arrange the corn fritters alternately with the onion-plum mixture and the herb cheese on top.
