  3. 3. Add the sugar to the butter and let it caramelize slightly.
  4. 4. Add the onion cubes and toss them briefly in the pan.
  5. 5. Deglaze the mixture with white wine.
  6. 6. Add the thyme and let everything simmer on low heat.
  7. 7. Continue cooking until the liquid has almost completely evaporated.
  8. 8. Cut the plums into small cubes.
  9. 9. Stir the plum cubes and honey into the onion mixture.
  10. 10. Wash the potatoes thoroughly.
  11. 11. Boil the potatoes in salted water for about 25 minutes until tender.
  12. 12. Drain the potatoes and let them drip dry.
  13. 13. Peel the cooked potatoes.
  14. 14. Press the potatoes through a potato ricer into a bowl.
  15. 15. Add the eggs, salt, and nutmeg to the potatoes.
  16. 16. Stir the ingredients until smooth and homogeneous.
