🍽️ Warm Potato and Lentil Salad

Ingredients
- 1 kg sweet potatoes
- 70 g red lentils
- 1 bunch spring onions
- 1 clove garlic
- 2 tbsp fruit vinegar
- 0.5 tsp mustard
- salt
- pepper (from the mill)
- 4 tbsp germ oil
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Boil the potatoes in salted water for about 25 minutes.
- 3. Drain the cooking water and let the potatoes steam for a moment.
- 4. Peel the cooled potatoes.
- 5. Slice the potatoes into thick rounds.
- 6. Rinse the lentils in a sieve under running water.
- 7. Cook the lentils in boiling salted water for approx. 5 minutes.
- 8. Drain the lentils and let them drip dry.
- 9. Wash the spring onions and trim the ends.
- 10. Slice the spring onions into fine rings.
- 11. Peel the garlic.
- 12. Finely chop the garlic.
- 13. Whisk vinegar, mustard, salt, and pepper for the dressing.
- 14. Beat the oil into the dressing with a whisk.
- 15. Mix the warm potatoes, lentils, spring onions, and garlic with the dressing.
- 16. Serve the salad warm.
