  2. 2. Boil the potatoes in salted water for about 25 minutes.
  3. 3. Drain the cooking water and let the potatoes steam for a moment.
  4. 4. Peel the cooled potatoes.
  5. 5. Slice the potatoes into thick rounds.
  6. 6. Rinse the lentils in a sieve under running water.
  7. 7. Cook the lentils in boiling salted water for approx. 5 minutes.
  8. 8. Drain the lentils and let them drip dry.
  9. 9. Wash the spring onions and trim the ends.
  10. 10. Slice the spring onions into fine rings.
  11. 11. Peel the garlic.
  12. 12. Finely chop the garlic.
  13. 13. Whisk vinegar, mustard, salt, and pepper for the dressing.
  14. 14. Beat the oil into the dressing with a whisk.
  15. 15. Mix the warm potatoes, lentils, spring onions, and garlic with the dressing.
  16. 16. Serve the salad warm.
