  1. 1. Peel the potatoes and cut them into small cubes.
  2. 2. Place the potato cubes into a pot.
  3. 3. Cover the potatoes with just enough water to barely submerge them.
  4. 4. Add a pinch of salt to the water.
  5. 5. Cook the potatoes for 15 minutes until they are tender.
  6. 6. Drain the cooking water.
  7. 7. Heat the milk in a small saucepan.
  8. 8. Press the warm potatoes through a potato ricer directly into the warm milk.
  9. 9. Whisk the mixture vigorously with a whisk until creamy.
  10. 10. Season the mash to taste with salt.
  11. 11. Stir in the butter until it has melted and combined.
  12. 12. Trim the fresh watercress from the stems.
  13. 13. Gently fold the watercress into the mash or use it as a garnish on top.
