  2. 2. Boil the potatoes with their skins on in salted water until tender.
  3. 3. Peel the potatoes if you prefer, or leave the skins on.
  4. 4. Cut the potatoes into quarters.
  5. 5. Whisk vinegar, vegetable broth, and oil together in a separate bowl to make the dressing.
  6. 6. Season the dressing generously with salt and black pepper.
  7. 7. Wash the dill and parsley under running water.
  8. 8. Spin the herbs dry or pat them thoroughly with a kitchen towel.
  9. 9. Pluck the fine leaves off the dill and parsley stems.
  10. 10. Wash the spring onions and trim off any dry tips.
  11. 11. Slice the spring onions into thin, diagonal rings.
  12. 12. Add the dill and parsley leaves, along with the onion rings, to the dressing.
  13. 13. Pour the dressing over the still warm potatoes.
  14. 14. Let the salad marinate for at least 15 minutes to allow the flavors to meld.
