🍽️ Classic Potato Herb Salad

Ingredients
- 600 g potatoes
- 4 tbsp white wine vinegar
- 5 tbsp vegetable broth
- 5 tbsp olive oil
- salt
- pepper (from the mill)
- 1 bunch dill
- 1 bunch parsley
- 1 bunch spring onions
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Boil the potatoes with their skins on in salted water until tender.
- 3. Peel the potatoes if you prefer, or leave the skins on.
- 4. Cut the potatoes into quarters.
- 5. Whisk vinegar, vegetable broth, and oil together in a separate bowl to make the dressing.
- 6. Season the dressing generously with salt and black pepper.
- 7. Wash the dill and parsley under running water.
- 8. Spin the herbs dry or pat them thoroughly with a kitchen towel.
- 9. Pluck the fine leaves off the dill and parsley stems.
- 10. Wash the spring onions and trim off any dry tips.
- 11. Slice the spring onions into thin, diagonal rings.
- 12. Add the dill and parsley leaves, along with the onion rings, to the dressing.
- 13. Pour the dressing over the still warm potatoes.
- 14. Let the salad marinate for at least 15 minutes to allow the flavors to meld.
