🍽️ Hearty Potato and Bean Salad

Ingredients
- 1 kg small, new potatoes
- salt
- 200 g fresh green beans
- 300 g fresh broad beans
- 300 g fresh peas
- 6 tbsp white balsamic vinegar
- 2 tbsp lemon juice
- 1 tsp honey
- pepper
- 4 tbsp olive oil
- 2 sprigs mint
- 60 g feta
Instructions
- 1. Scrub the potatoes clean.
- 2. Place them in a pot with salted water.
- 3. Boil the potatoes for about 20 minutes.
- 4. Check if the potatoes are tender.
- 5. Rinse the green beans.
- 6. Remove the hard ends of the beans.
- 7. Remove thick beans and peas from the pods.
- 8. Rinse the beans and peas under cold water.
- 9. Boil the green beans for 3 minutes in boiling salted water.
- 10. Add the thick beans and peas.
- 11. Cook the vegetables for another 5 minutes.
- 12. Pour the vegetables into a colander.
- 13. Pour cold water over the vegetables.
- 14. Let the vegetables drain well.
- 15. Mix vinegar and lemon juice.
- 16. Stir in honey, salt, and pepper.
- 17. Add the oil.
- 18. Wash the mint.
- 19. Dry the mint.
- 20. Chop the mint leaves finely.
- 21. Fold the mint into the dressing.
- 22. Drain the potatoes.
- 23. Mix the potatoes with the legumes.
- 24. Pour the dressing over them.
- 25. Season with salt and pepper.
- 26. Let the salad cool to lukewarm.
- 27. Crumble the feta into small pieces.
- 28. Fold the feta in gently.
