🥗 Potato and Herring Salad with Chives

Ingredients
- 800 g new potatoes
- 8 matjes fillets
- 1 tsp grainy mustard
- 100 g sour cream
- 50 g yogurt
- lemon juice
- salt
- white pepper
- 2 spring onions
- 2 tbsp chive rings
- parsley
- lemon slice
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Steam the potatoes for about 25 minutes, depending on their size, until they are cooked through.
- 3. Cut the matjes fillets into small pieces.
- 4. Stir mustard, sour cream, and yogurt together in a bowl until smooth.
- 5. Season the sauce to taste with lemon juice, salt, and pepper.
- 6. Wash the spring onions and trim off the ends.
- 7. Slice the spring onions into thin rings.
- 8. Quarter the cooked potatoes.
- 9. Arrange the potato quarters on the plates.
- 10. Drizzle some of the prepared sauce over the potatoes.
- 11. Place the matjes pieces on top of the saucy potatoes.
- 12. Sprinkle the salad with the spring onion rings and fresh chives.
- 13. Garnish the dish with parsley and lemon slices.
- 14. Serve the salad immediately.
