  4. 4. Stir mustard, sour cream, and yogurt together in a bowl until smooth.
  5. 5. Season the sauce to taste with lemon juice, salt, and pepper.
  6. 6. Wash the spring onions and trim off the ends.
  7. 7. Slice the spring onions into thin rings.
  8. 8. Quarter the cooked potatoes.
  9. 9. Arrange the potato quarters on the plates.
  10. 10. Drizzle some of the prepared sauce over the potatoes.
  11. 11. Place the matjes pieces on top of the saucy potatoes.
  12. 12. Sprinkle the salad with the spring onion rings and fresh chives.
  13. 13. Garnish the dish with parsley and lemon slices.
