🍽️ Crispy Potato Bites with Creamy Sauce

Ingredients
- 8 potatoes
- 1 tbsp oil
- salt

- 150 g sour cream
- 1 spring onion
- colorful pepper

- 1 pinch broth
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Cut the potatoes in half lengthwise.
- 3. Lightly grease a baking dish or a small baking sheet with oil.
- 4. Season the tray with a pinch of salt and freshly ground pepper.
- 5. Place the potato halves on the tray with the cut side facing down.
- 6. Preheat the oven to 200 degrees Celsius.
- 7. Slide the tray into the center of the oven.
- 8. Bake the potatoes for 25 to 30 minutes until they are cooked through.
- 9. Meanwhile, whisk the sour cream with the broth until smooth.
- 10. Season the sauce with a little salt if necessary.
- 11. Wash the spring onions and trim off any dry tips.
- 12. Slice the spring onions into thin rings.
- 13. Put the peppercorns into a mortar.
- 14. Coarsely crush the pepper with the pestle.
- 15. Take the finished potatoes out of the oven.
- 16. Carefully lift the potatoes from the tray using a spatula.
- 17. Place the potatoes on their skin side.
- 18. Place a dollop of sour cream on the cut surface of each potato.
- 19. Sprinkle the crushed pepper over the sauce.
- 20. Top the bites with the spring onion rings.
- 21. Arrange four pieces on a serving plate.
- 22. Insert a small wooden skewer into each piece.
- 23. Serve the bites with wine.
