Ingredients
- 1 kg cooked mealy-boiling peeled potatoes
- 150 g semolina
- salt
- 200 g quark
- 2 eggs
- ghee (for frying)
Instructions
- 1. Peel the potatoes.
- 2. Grate the potatoes using a fine grater.
- 3. Mix the grated potatoes with the semolina.
- 4. Add a pinch of salt.
- 5. Stir the quark into the mixture.
- 6. Add the egg.
- 7. Mix everything thoroughly.
- 8. Let the dough rest and swell for 15 minutes.
- 9. Heat ghee (clarified butter) in a large skillet.
- 10. Place the potato dough into the hot pan.
- 11. Press the dough to a thickness of about 1 cm.
- 12. Fry the dish over medium heat.
- 13. Fry it for about 10 minutes.
- 14. Flip the dish when the bottom is golden brown.
- 15. Fry it for another 10 minutes on the other side.
- 16. Tear the finished dish into small pieces using two forks.
- 17. Stir and roast the pieces all around.
- 18. Fry them until they are crispy.
- 19. Add a little more ghee if needed.
- 20. Serve the dish with apple sauce.
