  2. 2. Peel the cooked potatoes.
  3. 3. Slice the potatoes into rounds about half a centimeter thick.
  4. 4. Heat three tablespoons of olive oil in a large pan.
  5. 5. Add the finely diced onions and chopped garlic to the hot pan.
  6. 6. Sauté the vegetables for 15 minutes over medium heat until soft.
  7. 7. Add the chopped tomatoes, dried oregano, chopped parsley, honey, salt, and pepper to the pan.
  8. 8. Let the sauce simmer for another 15 minutes, stirring occasionally.
  9. 9. Preheat the oven to 180 degrees Celsius.
  10. 10. Grease a baking dish with one tablespoon of olive oil.
  11. 11. Layer the dish alternately with potato slices, crumbled cheese, olives, and the tomato sauce.
  12. 12. Finish the layers so that the sauce is on top.
  13. 13. Drizzle another tablespoon of olive oil over the gratin.
  14. 14. Bake the dish for 40 to 45 minutes in the preheated oven until golden brown.
