🍽️ Creamy Potato Gratin with Goat Cheese and Tomatoes

Ingredients
- 750 g firm-boiling potatoes
- 5 tbsp olive oil
- 1 large onion (finely chopped)
- 4 garlic cloves (finely chopped)
- 1000 g tomatoes (, peeled, small cubes)
- oregano
- 3 tbsp parsley (, finely chopped)
- 1 tsp honey
- salt
- pepper
- 200 g feta cheese (, small cubes)
- 25 black olives (, in pieces)
Instructions
- 1. Wash the potatoes and boil them in salted water until tender.
- 2. Peel the cooked potatoes.
- 3. Slice the potatoes into rounds about half a centimeter thick.
- 4. Heat three tablespoons of olive oil in a large pan.
- 5. Add the finely diced onions and chopped garlic to the hot pan.
- 6. Sauté the vegetables for 15 minutes over medium heat until soft.
- 7. Add the chopped tomatoes, dried oregano, chopped parsley, honey, salt, and pepper to the pan.
- 8. Let the sauce simmer for another 15 minutes, stirring occasionally.
- 9. Preheat the oven to 180 degrees Celsius.
- 10. Grease a baking dish with one tablespoon of olive oil.
- 11. Layer the dish alternately with potato slices, crumbled cheese, olives, and the tomato sauce.
- 12. Finish the layers so that the sauce is on top.
- 13. Drizzle another tablespoon of olive oil over the gratin.
- 14. Bake the dish for 40 to 45 minutes in the preheated oven until golden brown.
