🍲 Hearty Potato and Vegetable Soup with Smoked Pork

Ingredients
- 500 ml classic vegetable broth
- 300 g large waxy potatoes (3 large waxy potatoes)
- 1 tbsp rapeseed oil
- 300 g soup vegetables (frozen)
- 1 piece fresh horseradish (approx. 3 cm)
- 0.5 bunch chives
- 150 g chicken kassler (boneless)
- salt
- pepper
Instructions
- 1. Bring the vegetable broth to a boil in a pot.
- 2. Peel the potatoes.
- 3. Cut the peeled potatoes into cubes of about 1.5 cm.
- 4. Heat the oil in a separate pot.
- 5. Add the potato cubes and the mixed vegetables to the hot oil.
- 6. Sauté the vegetables for 2 to 3 minutes.
- 7. Pour the boiling broth over the potatoes and vegetables.
- 8. Bring the soup back to a boil.
- 9. Reduce the heat to medium and simmer the soup for 10 minutes.
- 10. Peel the horseradish while the soup is cooking.
- 11. Grate the peeled horseradish finely.
- 12. Wash the chives.
- 13. Shake the chives dry.
- 14. Cut the chives into fine rings.
- 15. Cut the smoked pork (Kassler) into 1 cm cubes.
- 16. Add the smoked pork cubes to the boiling soup.
- 17. Cook the soup for another 3 minutes.
- 18. Season the soup with salt and pepper to taste.
- 19. Serve the finished soup sprinkled with the grated horseradish and chive rings.
