🍽️ Potato Frittata with Chorizo

Ingredients
- 600 g boiled new potato
- 250 g Chorizo
- 2 tbsp olive oil
- 8 eggs
- 50 ml whipping cream
- 1 tbsp freshly chopped rosemary
- salt
- pepper (from the mill)
- nutmeg (freshly grated)
- parsley (for garnish)
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Peel the potatoes if you like and cut them into bite-sized pieces.
- 3. Slice the chorizo sausage.
- 4. Heat some oil in a pan and fry the sausage slices for 1 to 2 minutes over high heat.
- 5. Add the potato pieces and fry them together for 2 to 3 minutes.
- 6. Whisk the eggs in a separate bowl.
- 7. Stir the cream into the eggs.
- 8. Chop the rosemary and add it to the egg mixture.
- 9. Season the mixture with salt, pepper, and a pinch of ground nutmeg.
- 10. Pour the egg mixture evenly over the potatoes and sausage in the pan.
- 11. Place the pan in the preheated oven.
- 12. Bake the frittata for about 20 minutes until it is golden brown and cooked through.
- 13. Sprinkle the finished frittata with fresh parsley.
- 14. Serve the dish warm.
