🍲 Hearty Stew with Bratwurst and Root Vegetables

Ingredients
- 300 g firm-boiling potatoes
- 150 g carrots
- 150 g kohlrabi
- 100 g celery
- 1 onion
- 2 tbsp vegetable oil
- 800 ml vegetable broth
- salt
- pepper (from the mill)
- 8 fried sausages (Nuremberg)
- 20 g ghee
Instructions
- 1. Peel the potatoes, carrots, and kohlrabi.
- 2. Rinse the vegetables thoroughly.
- 3. Cut the potatoes, carrots, and kohlrabi into small cubes.
- 4. Wash the celery.
- 5. Remove the tough ends and leaves from the celery.
- 6. Slice the celery into thin rings.
- 7. Peel the onion.
- 8. Dice the onion finely.
- 9. Heat some oil in a large pot.
- 10. Add the diced onion to the hot oil.
- 11. Sauté the onion until translucent and soft.
- 12. Add the cut vegetables (potatoes, carrots, kohlrabi, celery) to the pot.
- 13. Sauté the vegetables briefly with the onion.
- 14. Deglaze the vegetables with the broth.
- 15. Season the soup with salt and pepper.
- 16. Simmer the stew over medium heat for 15 minutes.
- 17. Cut the bratwursts into 2 cm pieces.
- 18. Melt clarified butter in a frying pan.
- 19. Fry the sausage pieces until golden brown on all sides.
- 20. Add the fried sausage pieces to the soup.
- 21. Taste the finished soup and adjust seasoning with salt and pepper if needed.
- 22. Fill the soup into pre-warmed bowls.
- 23. Serve the stew hot.
