  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Cut the potatoes into small cubes.
  3. 3. Bring water to a boil and add some salt.
  4. 4. Cook the potato cubes for about 8 minutes.
  5. 5. Drain the water and rinse the potatoes with cold water to stop the cooking process.
  6. 6. Let the potatoes drain well.
  7. 7. Wash the beans and remove the hard ends.
  8. 8. Cut the beans into smaller pieces if desired.
  9. 9. Bring plenty of water to a boil and salt it generously.
  10. 10. Cook the beans for about 7 minutes (this is called blanching).
  11. 11. Drain the beans and rinse them immediately with ice-cold water.
  12. 12. Let the beans drain well.
  13. 13. Wash the salad greens and remove any wilted or dirty leaves.
  14. 14. Dry the salad well, preferably using a salad spinner.
  15. 15. Cut the salad into thin strips.
  16. 16. Wash the spring onions and clean them.
  17. 17. Slice the spring onions diagonally into thin rings.
  18. 18. Halve the artichokes lengthwise.
  19. 19. Whisk vinegar, salt, pepper, and oil together in a bowl.
  20. 20. Add all prepared ingredients to the dressing and mix everything well.
  21. 21. Serve the salad on plates.
