🍽️ Fresh Salad with Potatoes, Beans, and Artichokes

Ingredients
- 300 g potatoes
- 300 g green beans
- 150 g romaine lettuce
- 2 spring onions
- 4 marinated artichoke hearts
- 2 tbsp white wine vinegar
- 4 tbsp olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into small cubes.
- 3. Bring water to a boil and add some salt.
- 4. Cook the potato cubes for about 8 minutes.
- 5. Drain the water and rinse the potatoes with cold water to stop the cooking process.
- 6. Let the potatoes drain well.
- 7. Wash the beans and remove the hard ends.
- 8. Cut the beans into smaller pieces if desired.
- 9. Bring plenty of water to a boil and salt it generously.
- 10. Cook the beans for about 7 minutes (this is called blanching).
- 11. Drain the beans and rinse them immediately with ice-cold water.
- 12. Let the beans drain well.
- 13. Wash the salad greens and remove any wilted or dirty leaves.
- 14. Dry the salad well, preferably using a salad spinner.
- 15. Cut the salad into thin strips.
- 16. Wash the spring onions and clean them.
- 17. Slice the spring onions diagonally into thin rings.
- 18. Halve the artichokes lengthwise.
- 19. Whisk vinegar, salt, pepper, and oil together in a bowl.
- 20. Add all prepared ingredients to the dressing and mix everything well.
- 21. Serve the salad on plates.
