🍲 Hearty Stew with Potatoes, Beans, and Kabanossi

Ingredients
- 500 g mostly waxy potatoes
- Butterfat (for frying)
- 2 red onions
- 200 g green beans (frozen)
- 1 l vegetable broth
- Salt
- Pepper (from the mill)
- Horseradish (to round off the flavor)
- 0.5 Kabanossi
- 0.5 bunch chives
Instructions
- 1. Peel the potatoes.
- 2. Slice the peeled potatoes into thin rounds.
- 3. Heat some ghee in a deep pan with a lid.
- 4. Add the potato slices to the hot fat.
- 5. Fry the potatoes until golden brown on all sides.
- 6. Peel the onions.
- 7. Halve the onions.
- 8. Cut the onion halves into thin half-rings.
- 9. Sauté the onion rings briefly.
- 10. Add the beans to the pan.
- 11. Pour in enough vegetable broth to cover the bottom by about 3 centimeters.
- 12. Place the lid on the pan.
- 13. Let the stew simmer on low heat.
- 14. Cook until the potatoes are tender.
- 15. This takes about 15 minutes.
- 16. Add more broth if necessary.
- 17. Slice the kabanossi sausages.
- 18. Add the sausage slices to the stew.
- 19. Season the dish generously with salt.
- 20. Season it additionally with pepper.
- 21. Stir in horseradish to round out the flavor.
- 22. Cut the chives into fine rings.
- 23. Sprinkle the finished stew with the chives.
