  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Slice the potatoes into paper-thin rounds.
  3. 3. Blanch the potato slices in boiling water for 60 seconds.
  4. 4. Remove the potatoes immediately and cool them in a bowl of cold water.
  5. 5. Pat the potato slices dry with kitchen paper.
  6. 6. Wash the apples and remove the cores.
  7. 7. Slice the apples thinly as well.
  8. 8. Place the apple slices briefly in salted water to prevent browning.
  9. 9. Pat the apple slices dry with kitchen paper.
  10. 10. Grease four shallow, ovenproof ramekins.
  11. 11. Sprinkle the bottom of the ramekins with salt and pepper.
  12. 12. Layer the potato and apple slices in a shingled pattern into the ramekins.
  13. 13. Season the layers with salt, pepper, and ground nutmeg.
  14. 14. Bring cream and milk to a boil in a pot.
  15. 15. Pour the hot liquid evenly over the four ramekins.
  16. 16. Sprinkle Parmesan and oregano on top.
  17. 17. Preheat the oven to 200 degrees.
  18. 18. Place the ramekins on the second rack from the bottom in the oven.
  19. 19. Bake the gratin for about 25 to 30 minutes.
