Ingredients
- 600 g firm-cooking small potatoes
- 200 g turkey bacon (in slices)
- 5 tart apples
- 0.25 l whipping cream
- 1 egg
- salt
- pepper (from the mill)
- 1 level tbsp sweet mustard
- 4 spring onions
- 8 tbsp grated Emmental cheese
Instructions
- 1. Place the potatoes in a pot with water.
- 2. Boil the potatoes until they are tender.
- 3. Peel the cooked potatoes.
- 4. Wash the apples thoroughly.
- 5. Remove the core from the apples.
- 6. Slice the apples into thin rounds.
- 7. Wash the spring onions.
- 8. Cut the spring onions into small pieces.
- 9. Cut the bacon into bite-sized cubes.
- 10. Whisk the cooking cream with the egg.
- 11. Add 6 tablespoons of grated cheese to the cream-egg mixture.
- 12. Season the mixture with salt and pepper.
- 13. Stir a spoonful of mustard into the sauce.
- 14. Place the peeled potatoes, apple slices, and spring onions on a baking sheet.
- 15. Pour the cream-egg mixture evenly over the vegetables and apples.
- 16. Distribute the bacon and the remaining cheese on top.
- 17. Preheat the oven to 200 degrees.
- 18. Bake the gratin in the oven for 30 minutes.
