🍽️ Potato and Pea Vegetable Dish

Ingredients
- 500 g peas
- 500 g potatoes
- 400 g chunky tomatoes (can)
- 4 spring onions
- 2 tbsp dill (chopped)
- 1 tbsp fresh oregano
- 4 tbsp olive oil
- 1 dash lemon juice
- salt
- pepper (from the mill)
Instructions
- 1. Rinse the peas under running water.
- 2. Remove any damaged or bad peas.
- 3. Let the peas drain well in a colander.
- 4. Peel the potatoes completely.
- 5. Cut the peeled potatoes into small cubes.
- 6. Wash the spring onions thoroughly.
- 7. Remove the dry ends and any wilted leaves.
- 8. Slice the spring onions into thin rings or slices.
- 9. Heat oil in a pan or pot.
- 10. Add the potato cubes and spring onions to the hot oil.
- 11. Sauté the vegetables briefly until they are fragrant.
- 12. Fold the drained peas into the vegetable mix.
- 13. Add the tomatoes.
- 14. Cover the pan or pot with a lid.
- 15. Reduce the heat to a low setting.
- 16. Let the vegetables simmer for about 30 minutes.
- 17. Check periodically to see if liquid is needed.
- 18. Add a little water if necessary to prevent the vegetables from burning.
- 19. Add the fresh herbs to the finished vegetables.
- 20. Add lemon juice.
- 21. Season the mixture with salt to taste.
- 22. Season the mixture with pepper to taste.
- 23. Serve the warm vegetables immediately.
