🍽️ Crispy Carp Cutlets

Ingredients
- 8 Carp cutlets (approx. 150 g each)
- Salt
- Pepper
- 1 tbsp Lemon juice
- 2 tbsp Flour
- 2 Eggs
- 120 g Breadcrumbs
- 80 g Clarified butter
Instructions
- 1. Rinse the carp cutlets under running water.
- 2. Pat the fish completely dry with kitchen paper.
- 3. Season the cutlets with salt and pepper.
- 4. Drizzle the fish with some lemon juice.
- 5. Roll the cutlets in flour until they are lightly coated.
- 6. Whisk the eggs in a deep plate.
- 7. Dip the floured cutlets into the egg mixture.
- 8. Cover the fish completely with breadcrumbs.
- 9. Heat ghee (clarified butter) in a large frying pan.
- 10. Fry the carp cutlets for about 10 minutes until golden brown.
- 11. Turn the cutlets 2-3 times while frying.
- 12. Pour the hot ghee over the fish repeatedly.
- 13. Let the finished cutlets drain on kitchen paper.
- 14. Serve the carp cutlets on a bed of parsley.
