🍽️ Carp with Honey and Almonds

Ingredients
- 1 whole carp (approx. 1 kg, gutted, scaled, head removed)
- 1 tbsp lemon juice
- salt
- 4 tbsp clarified butter
- 60 g butter
- 80 g sliced almonds
- 2 tsp honey
Instructions
- 1. Thoroughly wash the carp inside and out.
- 2. Cut the fish into four equal pieces using a sharp knife.
- 3. Drizzle lemon juice into the belly cavity of the fish pieces.
- 4. Season the fish with salt.
- 5. Heat ghee (clarified butter) in a non-stick pan.
- 6. Fry the carp pieces on both sides for 3 to 4 minutes until golden brown.
- 7. Remove the fried fish pieces from the pan and set them aside.
- 8. Heat butter in a second, clean pan.
- 9. Add the sliced almonds to the hot butter.
- 10. Toast the almonds for 1 to 2 minutes until golden brown.
- 11. Stir the honey into the almond-butter mixture.
- 12. Place the prepared carp pieces into the pan.
- 13. Remove the pan from the heat source.
- 14. Cover the pan with a lid.
- 15. Let the fish steep in the warm sauce for 5 minutes.
- 16. Serve the dish immediately while warm.
