🍽️ Wok Carrots with Glass Noodles

Ingredients
- 400 g Carrots
- Salt
- 1.5 cm fresh Ginger
- 300 g Napa Cabbage
- 0.5 bunch Coriander
- 250 g Glass Noodles
- 2 tbsp Soybean Oil
- dark Soy Sauce (to taste)
- Pepper (from the mill)
Instructions
- 1. Peel the carrots.
- 2. Cut them into sticks about 4 centimeters long.
- 3. Bring salted water to a boil.
- 4. Add the carrot sticks to the boiling water for 2 minutes (this is called blanching).
- 5. Remove the carrots.
- 6. Rinse them immediately with cold water to stop the cooking process.
- 7. Let the water drain well.
- 8. Peel the ginger.
- 9. Grate the ginger finely.
- 10. Remove the tough stems from the cabbage.
- 11. Cut the cabbage into thin strips.
- 12. Wash the coriander.
- 13. Shake it dry.
- 14. Finely chop the coriander leaves.
- 15. Place the glass noodles in a bowl.
- 16. Pour boiling water over them.
- 17. Let the noodles soak for 10 to 15 minutes.
- 18. Heat the oil in a wok.
- 19. Add the carrots, cabbage, and ginger to the wok.
- 20. Toss the ingredients occasionally while they sweat.
- 21. Season the vegetables with soy sauce and pepper.
- 22. Taste and adjust the seasoning.
- 23. Fold in the chopped coriander.
- 24. Drain the glass noodles.
- 25. Mix the noodles with the vegetables in the wok as you like, or serve them separately.
