  1. 1. Peel the carrots.
  2. 2. Cut them into sticks about 4 centimeters long.
  3. 3. Bring salted water to a boil.
  4. 4. Add the carrot sticks to the boiling water for 2 minutes (this is called blanching).
  5. 5. Remove the carrots.
  6. 6. Rinse them immediately with cold water to stop the cooking process.
  7. 7. Let the water drain well.
  8. 8. Peel the ginger.
  9. 9. Grate the ginger finely.
  10. 10. Remove the tough stems from the cabbage.
  11. 11. Cut the cabbage into thin strips.
  12. 12. Wash the coriander.
  13. 13. Shake it dry.
  14. 14. Finely chop the coriander leaves.
  15. 15. Place the glass noodles in a bowl.
  16. 16. Pour boiling water over them.
  17. 17. Let the noodles soak for 10 to 15 minutes.
  18. 18. Heat the oil in a wok.
  19. 19. Add the carrots, cabbage, and ginger to the wok.
  20. 20. Toss the ingredients occasionally while they sweat.
  21. 21. Season the vegetables with soy sauce and pepper.
  22. 22. Taste and adjust the seasoning.
  23. 23. Fold in the chopped coriander.
  24. 24. Drain the glass noodles.
  25. 25. Mix the noodles with the vegetables in the wok as you like, or serve them separately.
