  2. 2. Cut the zucchini in half lengthwise.
  3. 3. Slice the zucchini halves into rounds about 1 cm thick.
  4. 4. Wash the rosemary and shake off excess water.
  5. 5. Strip the rosemary needles from the stems.
  6. 6. Finely chop the rosemary needles.
  7. 7. Pat the tofu dry with kitchen paper.
  8. 8. Cut the tofu into cubes about 2 cm in size.
  9. 9. Heat the olive oil in a pot.
  10. 10. Place the zucchini slices in the hot oil.
  11. 11. Sauté the zucchini briefly.
  12. 12. Lightly salt the zucchini.
  13. 13. Reduce the heat to low.
  14. 14. Cover the pot with a lid.
  15. 15. Simmer the zucchini for about 3 minutes.
  16. 16. Wash the chicory thoroughly.
  17. 17. Separate the chicory leaves one by one.
  18. 18. Cut off the leaf tips to a width of about 2 cm.
  19. 19. Set aside the cut leaf tips.
  20. 20. Cut the remaining chicory into strips 1 cm wide.
  21. 21. Add the chicory strips to the zucchini slices.
  22. 22. Keep the heat on low.
  23. 23. Cover the pot again.
  24. 24. Simmer the vegetables for about 2 minutes.
  25. 25. Put the sugar into a pan.
  26. 26. Add 1 tablespoon of water to the sugar.
  27. 27. Melt the sugar while stirring.
  28. 28. Let the sugar caramelize until golden brown.
  29. 29. Remove the pan from the heat.
  30. 30. Add the tofu cubes to the hot caramel.
  31. 31. Gently turn the tofu cubes in the caramel.
  32. 32. Warm the tofu in the caramel.
  33. 33. Sprinkle salt over the tofu.
  34. 34. Sprinkle the chopped rosemary over the tofu.
  35. 35. Crush the peppercorns with your fingers.
  36. 36. Add the crushed peppercorns over the tofu.
  37. 37. Fold the chicory tips into the vegetables.
  38. 38. Heat the vegetables with the tips.
  39. 39. Season the vegetables with salt.
  40. 40. Season the vegetables with freshly ground pepper.
  41. 41. Serve the vegetables with the caramelized tofu.
