🍽️ Crispy Tofu with Caramelized Vegetables

Ingredients
- 400 g zucchini (2 zucchini)
- 1 sprig rosemary
- 200 g tofu
- 1 tsp olive oil
- salt
- 360 g large chicory (2 large chicory)
- 30 g cane sugar
- 1 tsp pink peppercorns
- freshly ground pepper
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Cut the zucchini in half lengthwise.
- 3. Slice the zucchini halves into rounds about 1 cm thick.
- 4. Wash the rosemary and shake off excess water.
- 5. Strip the rosemary needles from the stems.
- 6. Finely chop the rosemary needles.
- 7. Pat the tofu dry with kitchen paper.
- 8. Cut the tofu into cubes about 2 cm in size.
- 9. Heat the olive oil in a pot.
- 10. Place the zucchini slices in the hot oil.
- 11. Sauté the zucchini briefly.
- 12. Lightly salt the zucchini.
- 13. Reduce the heat to low.
- 14. Cover the pot with a lid.
- 15. Simmer the zucchini for about 3 minutes.
- 16. Wash the chicory thoroughly.
- 17. Separate the chicory leaves one by one.
- 18. Cut off the leaf tips to a width of about 2 cm.
- 19. Set aside the cut leaf tips.
- 20. Cut the remaining chicory into strips 1 cm wide.
- 21. Add the chicory strips to the zucchini slices.
- 22. Keep the heat on low.
- 23. Cover the pot again.
- 24. Simmer the vegetables for about 2 minutes.
- 25. Put the sugar into a pan.
- 26. Add 1 tablespoon of water to the sugar.
- 27. Melt the sugar while stirring.
- 28. Let the sugar caramelize until golden brown.
- 29. Remove the pan from the heat.
- 30. Add the tofu cubes to the hot caramel.
- 31. Gently turn the tofu cubes in the caramel.
- 32. Warm the tofu in the caramel.
- 33. Sprinkle salt over the tofu.
- 34. Sprinkle the chopped rosemary over the tofu.
- 35. Crush the peppercorns with your fingers.
- 36. Add the crushed peppercorns over the tofu.
- 37. Fold the chicory tips into the vegetables.
- 38. Heat the vegetables with the tips.
- 39. Season the vegetables with salt.
- 40. Season the vegetables with freshly ground pepper.
- 41. Serve the vegetables with the caramelized tofu.
